Trout, Prosciutto & wine - A gourmet tour to taste and, why not, to bring home some of the best local and traditional products. The cold smoked trout of Friultrota, the world famous San Daniele prosciutto DOP, and the strictly local wine varietals of winery.

In the center of the FVG region we find San Daniele del Friuli, a town of 8000 inhabitants of the province of Udine, perched on top of a hill at 252 m s.l.m. The city is known throughout the world for the production of the homonymous DOP prosciutto. In San Daniele the know how to make the ham has been handed down for centuries and the maturing must last at least 13 months. Made only with pork and sea salt, following rules of processing inherited from an ancient tradition. Moreover, the FVG, thanks to its 2500 km of perennial and very pure sweet waters, is the first region in Italy for the breeding of trout, with which it covers 40% of the national production. The clear waters of the river Tagliamento, which flows near San Daniele del Friuli, are also the natural home of the trout, here called "the Queen of San Daniele", which is bred and processed in a traditional way with the technique of cold smoking or hot, in the case of the "Fil di Fumo"; its excellent quality is compared to that of salmon.Finally, the Friulian territory is a large vineyard nestling between the mountains and the sea, a paradise where some of the best white wines in the world are produced each year. An area of twenty thousand hectares that includes eight DOC zones and three DOCG area. The vineyards that are located near San Daniele del Friuli are part of the DOC Friuli Grave area, with an area of about 7,500 hectares straddling the Tagliamento river, between the provinces of Pordenone and Udine. The wines of the white grape variety are fresh, fruity and elegant; the harmonic reds and perfumed by young people, full and structured if aged. Red wines: Cabernet Franc, Cabernet Sauvignon, Merlot, Pinot neto, Refosco dal Peduncolo Rosso. White wines: Chardonnay, Friulano, Pinot Bianco, Pinot Grigio, Riesling, Sauvignon, Traminer Aromatico, Verduzzo Friulano.
