An experience to live our traditions and knowing the origins of our cuisine in the typical Apulia buildings: i trulli surrounded by a peaceful nature.
The art of making the orecchiette (our traditional pasta) is part of a ritual made also of soil and wind, a time in the countryside, slowly spent for preparing our lunch collecting wild herbs, fruits, tomatoes, melons and all that our organic garden seasonaly produce.The same slow time lived by our grandmothers to prepare the daily lunch for all the family.
At home, a pastry board, the flour and the wind will be the simple ingredients to make our Orecchiette. We will learn to do this particular pasta, its variations and many other secrets will be revealed. We will then partecipate to prepare meat sauce, vegetables and cheese and all necessary for lunch. We will taste all our preparations.

The cooking class begins normally at 10.30 in our Trulli as meeting point.
It comprehens a class to learn how to produce the orecchiette, a light aperitif, a little tour to know local wild herbs and brief notices about our traditions and a final lunch based on meat (as tradition) but it is available also a vegetarian solution.

  • Class: with the simple traditional ingredients we will learn to make the Orecchiette (little ears). We provide for all necessary.
  • Tour: our countryhouse is ideal also for discovering the wild herbs of Valle d'Itria. They are mostly edible. We cultivate also vegetables and have many olive and fruits trees. Depending on the season we wil collect different vegetables and fruits.
  • Lunch is composed by a aperitif, first course based on the self-made orecchiette with meat- or vegetables sauce (on request), contour of vegetables, second course of meat, seasonal fruit and Italian coffee.
  • Pls note that following an organic and traditional cultivation, also the ingredients for lunch may be different depending on season. Please report any food requirements in advance. We are available to personalize your cooking class: particular flours (like gluten free or whole wheat) to communicate within 1 day before.

Learn how to make traditionalhandmade pasta, orecchiette, is one of the highlights of the day; its unique shape (like little ears) and the combining of Apulian wheat flour and semolina, produces little domes of heaven. Pasta preparation will be enhanced with olives, focaccia, taralli and a glass of prosecco! Next we prepare the "pastella", for the medley of fried vegetables. The vegetable pieces are rolled in flour, then dipped in a mixture of eggs beaten with finely chopped parsley, salt, pepper and just a bit of grated pecorino cheese and then steeped in hot olive oil. Then, learn all the secrets behind the perfect parmigiana di melanzane (eggplant parmesan) using the sweet tomato sauce that has been cooking for about an hour, and delicious local ingredients. While preparing the eggplants you will start to fry the zucchini flowers filled with locally produced, ricotta and enjoy tasting them while they are hot from the pan.
Time to relax, sit down at linen covered tables for therestaurant style four-course meal and award winning wines.
