An experience to live our traditions and knowing the origins of our cuisine in the typical Apulia buildings: i trulli surrounded by a peaceful nature.
The art of making the orecchiette (our traditional pasta) is part of a ritual made also of soil and wind, a time in the countryside, slowly spent for preparing our lunch collecting wild herbs, fruits, tomatoes, melons and all that our organic garden seasonaly produce.The same slow time lived by our grandmothers to prepare the daily lunch for all the family.
At home, a pastry board, the flour and the wind will be the simple ingredients to make our Orecchiette. We will learn to do this particular pasta, its variations and many other secrets will be revealed. We will then partecipate to prepare meat sauce, vegetables and cheese and all necessary for lunch. We will taste all our preparations.

Trulli as meeting point.
It comprehens a
class to learn how to produce the orecchiette, a light
aperitif, a little tour to know local
wild herbs and brief notices about our
traditions and a final
lunch based on meat (as tradition) but it is available also a vegetarian solution.
• Class: with the simple traditional ingredients we will learn to make the Orecchiette (little ears). We provide for all necessary.
• Tour: our countryhouse is ideal also for discovering the wild herbs of Valle d'Itria. They are mostly edible. We cultivate also vegetables and have many olive and fruits trees. Depending on the season we wil collect different vegetables and fruits.
• Lunch is composed by a aperitif, first course based on the self-made orecchiette with meat- or vegetables sauce (on request), contour of vegetables, second course of meat, seasonal fruit and Italian coffee.
• Pls note that following an organic and traditional cultivation, also the ingredients for lunch may be different depending on season. Please report any food requirements in advance. We are available to personalize your cooking class: particular flours (like gluten free or whole wheat) to communicate within 1 day before.

Puglia is known also for its delicious cheese and the great numbers of its different varietes: ricotta, pecorino, provolone, spicy and many others. In a rural "masseria" (old farmhouse) we will produce one of our typical cheese, the  "cacio ricotta", a sweet and fresh cheese, one of the symbols of our traditional cookery, usually to season the Orecchiette pasta.

Old traditions handed down from generations on. The invention of cheese dates back to about six thousand years ago and Apulia became over time an important production center for the whole Southern Italy. 
We will experience to be a farmer, the most tasting and thrilling rule: making the cacioricotta cheese in a typical farmhouse of the countryside between Ostuni and San Michele Salentino.
In their 30 hectars among olive trees and hay meadow we will visit the farm and know the agricultural cultivation; we will see all the animals of the farms and the rare sheep "moscia", a black sheep well-known all ovser the world and typical of Salento. Then, we will produce our own cacio ricotta cheese. At the end, we will also taste all the dairy productions of the farm. Every masseria is specialized in three or more varieties of cheeses each with its particular taste, a unique flavour due to the particular soil, the "air" and the grass. Everything contribute to the cheese softness...! . In this particular one are mostly produced: mozzarella cheese, cacio ricotta, fresh ricotta cheese, pecorino and caciocavallo cheese.
